“RAWGANIC VEGAN” ALMOND BUTTER BANANA PIE

In the busyness of the holiday season, I did not get a chance to share all of the AWESOME vegan food I made. This was so DELICIOUS and easy! It does contain nut butter but is still low fat for such a decadent pie and is sweetened with maple syrup (only 1/3C + 3 TBSP in the whole recipe)! I am definitely making this again!!!

“RAWGANIC VEGAN ALMOND BUTTER BANANA PIE

Not even kidding. This is the best dessert in the world...and with ZERO GUILT. Sink your teeth into this raw, vegan, super pie 

This is one of the easiest and most crowd-pleasing (including kids) raw pies ever, and the best part is that you don’t need any oil of any kind and only a small amount of nut butter. Feel free to swap cashew or walnut butter in place of the almond butter!

CRUST

1/2 cup oats

1/2 cup oat flour

1/3 cup almond butter

1 tsp vanilla

1 tsp Himalayan salt

BANANA LAYER

8 super ripe frozen bananas

1 tsp vanilla extract

1 tsp almond extract

1/4 cup maple syrup

3 tbsp almond butter

FUDGE LAYER

1/3 cup raw cacao powder

1/3 cup maple syrup

1/2 frozen banana

To make the crust, simply mix all ingredients together in a bowl. Use a fork to help mix the nut butter in with the oats and oat flour. It is ready when it is well incorporated and you can press it into a pan. Press into bottom of pie pan, and place in the freezer while you make the banana layer.

Mix the banana layer by placing all ingredients together in the food processor and processing until smooth. Spread on to the crust and freeze for about 1 hour.

To make the chocolate topping, mix all ingredients in a food processor until smooth and creamy. Pour on top of the pie and freeze for about 2 hours. Serve. Enjoy!”
